The Fourth episode of the Home Chefs Series of SevenzTV features a delicacy from the Middle East, bringing an Arabic flavour that has delighted people worldwide.

Hamssa Costello, a Mrs Universe 2022 candidate joined Bharati Sonu to cook ‘Maqluba,’ which involves an elaborate process with rice, vegetables and chicken.

The Arabic dish is a favourite among Arabs -from Palestine to Saudi Arabia and is featured in Royal banquets as well as ordinary homes.

As Hamssa demonstrates, the final dish is upside down, hence the name.

Unique in Culinary Art

What is unique about ‘Maqluba’ is how it is carefully layered, cooked, and then flipped upside down to reveal the combination of rice, meat, and vegetables.

Though a dish commonly made across various Arabic countries, each household has its own style of preparing ‘Maqluba.’ Hence it is a popular household dish.

While this dish can be prepared in many ways, its common ingredients are layers using rice, vegetables and meat cooking upside down. This is to blend the flavours making it a real delicacy.

About Hamssa Costello

Born in Iraq and raised in New Zealand, she is a multi-talented woman with an innate passion for cooking and often invites families and friends for feasts at her home in Pukekohe.

She chose ‘Maqluba’ since it offers many options for cooking rice interestingly with different choices of vegetables and meat.

“This is also my mother’s favourite dish, which she used to make on special occasions and invite relatives and friends,” she said.

Hamssa is also a ‘go-to’ person for birthday cakes. Her cakes are legendary and are in demand amongst her contacts. This episode showcases her culinary skills and her passion for cooking.

Hamssa used to be a wedding planner and a florist. In this episode, she also gives tips on how to make your floral arrangement last longer.

“We can see the passion with which Hamssa guided us through the step-by-step process of cooking this recipe. We understand the anxiety of getting this dish in perfect shape as Hamssa and show host Bharati lift the upside-down pan to see if the dish has come out in good shape,” Shoba Sonu said.
